I did a similar course through AAMI after I'd had my P's for a couple of years and I would say this type of course is great for the "I reckon I'm pretty good but I don't act stupid on the roads" style driver. Going through practical examples of what your reaction time translates to is a great lesson for everybody. The 2 second rule is one of the things that I still carry with me to this day (a decade later) - that's 55 metres between you and the car in front at 100km/h on a dry day.
As for the knucklehead who believes they're bulletproof no course can bring that confidence level down to reality. You only hope they have some sort of scare resulting from their bad driving (that hopefully doesn't involve injury or death to them, their passengers or innocent victims) that forces them into a reality check and a rethink on their attitude on the roads.
