What speakers are you looking to get, or how much do you want to spend? I assume you are looking a decent quality splits for the front.

For the sub, you want something with more than 300wrms @ 2ohm. Shopping Secure - Car Audio Specialists - Steg QM 240.1x is a very high quality amp that will make sure you get the most out of your sub.

Without knowing the speakers you are going to use it is hard to suggest an amp, but Shopping Secure - Car Audio Specialists - Steg QM 45.4x is my pick for most high quality splits. Plenty of power (bridged), or the crossovers are good enough that you can run your splits active if you want to get a bit more involved in your setup. My future plans for my own car include this amp running my fronts

you probaly would want two amps and make sure you buy amps with very low thd which is distortion

i am curently buying a eclipse head deck and focal 2ch amp with focal splits for lack of distortion

a amp with very low distortion of like 0.2%thd compaird to one with like 2-4%thd will actaully sound as good with half the power that is why high end systems for many aplications only run like 50w over cheap systems that get out done at 100w by the 50w 0.2%thd system

oh yea to double the db you need 10x the power so when a 50w system makes more db than a 100w system than you know it's distortion is spot on

These AD6's Shopping Secure - Car Audio Specialists - Audio Development AD6 are amazing for the price. I rate them between Type R's and X's on the tried and tested "alpine scale".
Or, I"ll try and do you a deal on the next model up Shopping Secure - Car Audio Specialists - Audio Development AD60 and get them a bit closer to $500 for you. Although they really want more power than that steg amp would give them

Okay thanks for all the help guys, i've bought all the gear (should be hear next week/week after).

I don't really want to pay someone to do the installation for me. Is there a complete guide on how to do this? eg. cables needed, cable mounting etc. I've found the guide to take the door trim off.

What did you end up getting? And whereabouts are you? Someone local might be able to give you a hand for a 6 pack

That amp isn't NEARLY powerful enough to get the most out of the AD6's or your subs.
Looks like a 4ch 8g wiring kit is what it wants though.
