I bought the VT with the original head unit replaced with a single din unit and a storage tray underneath. I have read how to remove the original unit with special tool/coathangers etc, but I can't figure out how to remove this one (Kenwood KDC 1016) or the tray underneath - there are no holes to push tools into. There is a plastic surround around the headunit, but I cant see how that comes off. Can anyone help?

the plastic tray underneath just clips in, it will come out if you give it a good tug, you need the two little "keys" to get the h/u out assuming it was put in correctly, the plastic surround also simply clips on and off (with face detached) which will give you access to where the keys go. you should be able to see how the h/u its mounted in when you remove the plastic tray.
Just to clarify.....
Officially, you should remove the head unit first. To do this, first remove the head unit face (if possible) to prevent scratching it. There's normally a plastic trim panel around the outside of the head unit, and this can be removed by squeezing in the right place and gently pulling. You may need to experiment with what seems to work, because they're all different. Once you have the trim piece off, you should be left with the metail "cage" with the head unit sitting in it. There will be 2 thin slots on the side, and you need to insert 2 keys into these slots to un-clip the head unit. It seems all the keys are pretty much the same, so any brand will do. Usually you can just fully insert the keys and then pull back - the head unit will unclip and slide out as you pull.
If you don't have the keys, you may need to resort to pulling the whole plastic panel out. This may prove difficult since there's not much to hang on to, but the fascia panel just clips in and should come free with a good firm pull. You should then be able to access the rear of the head unit.
