What is needed to convert a V6 to a V8 aside from the engine and ECU?

What do you mean by springs? Not too familiar with engine mountings.

EDIT: So transmission will be fine, whether it's TH700 auto or getrag?

with the VS im pretty sure you just change the direction of the trans cross member...

stiffer springs for the V8 and the engine mounts bolt onto the V8 k frame
