Your trailer should be well secured (obviously) don't take any shortcuts. Make sure the lights and terminals are in good order and don't go anywhere unless the chains and shackels are bolted to the bar. Check the load is secured at every stop.

With the gas, I have heard of two friends who have had the gas filling problem. Have you tried another servo?

What I believe is the problem is there is a one-way valve in the tank where the filler connects and I reckon they can stuff up. I'd get a gas joint to look at it for you. I have never replaced one but it shouldn't be hard. I would make sure the tank is empty before playing with it. It should be a matter of taking the old fitting out and putting a new one in. That's the only thing I can think that is wrong. The actual filler hose should be fine.

If you pop the cover off the back of the tank, it should have a guage on it to tell you how full it is.

Gas cars hate the heat. If you're having dramas filling the tank try doing it of an evening or first thing in the morning. Ford reccomend this with the P.O.S. gas only cars they produce. (When will they move onto gas injection like the rest of the civilised world! I know they still use leaf springs in their products, but come on!!)
