Which Oil Should I Use?

What oil would you recommend I use when I service my car?

Its a 97 VT 3.8L V6. Done 265000km's

Would I use 20w - 50 or should I go something a bit thicker?

Also should I use synthetic oil or mineral? I hear synthetic oil shrinks the seals?
