what's best for the plates and the stainless fascia ?
Degreaser works great on the fascia , just not a good idea to use it while cooking...
The plates are pretty easy to clean once you work it out.
I just take them off, sit them on the sink and yell out to mum to clean them. I find them not long after sitting on the edge of the BBQ nice and clean ready to slot back into place, to easy.

Hang them off a tree or stand them up facing the sun on a hot day. Works for me.
don't clean them, you take all the flavour off!!
Just scrape all the crap off them once you're fininshed with them for the night.
If you're about to cook on it, get the heat on for a bit, scrape as much off as you can, then turn off the heat and wipe it down with a bit of folded paper towel to get the grit off. Sometimes a little oil on the towel helps to give it some adhesion.
If they are really ugly, as above, but then get them in the kitchen and let loose with oven cleaner.

if its real bad take the plates out and hit them with a pressure cleaner works for me
Never heard of the beer + salt thing, what's the deal behind that?
Usually I'm drinking the beer, not frying it!

Salt is only to sterilize it right? I normally wait till it goes brown then scrape it down. Beer is good for cleaning her up too.
Pretty sure it's sterile enough at 450 degrees or whatever temperature it is the plate reaches.

Degreaser is a bit harsh for animal fat when cleaning the stainless steel. Good old fashioned dishwashing detergent will do just as good a job. Also good to use on timber surrounds with a steel wool pad to remove ingrained oil and stains. Then good wash with clean water.
Hotplates have already been well covered by everybudy else, although every so many months, I dismantle my BBQ and wash the interior down with detergent to remove the build up. Worst part of the whole maintenance bit, this. It's amazing how much crap builds up after spilling over the edges of the hotplates.
Salt is the go it soaks up a lot of the fat to make it easier to remove. Be careful about thinking that once it is hot it will be clean, some bugs that the heat may have killed can still leave behind toxic chemicals (toxic bacteria poo).
I scrub with salt and scrape the worst off just after cooking and if it hasn't been used for a bit take it to the laundry tub and wash it like anything else. Don't leave it in the tub too long (like forgetting about it overnight) as it can stain the tub.
Spraying it with a bit of oil once done to stop the rust.
