Depends on what you mean by cash in hand. Most peoples definition would be to get your pay cash in hand and there would be no tax records. Some employers still pay cash in hand but they tax your pay and give a group certificate.
If yours is the second option you can use it to get a loan.

If you are applying for a loan, generally they want to see payslips and confirmation with payroll of your employment length and terms.

Writing a cash amount on the application won't get you far if they cannot verify the details if you are being paid cash under the table.

It not a good situation to get stuck in. You are almost allways are much worse off getting cash. People pay you less and ask you to work more, plus if you get a stick in the eye at work your all alone. In general, don't do it

If he gets caught drawing the dole and working cash they will throw the book at him. More and more people are getting caught these days too, not worth the risk in the long run.
