I used to work in a fine quality Italian Butcher, they taught me what it was to eat/cook QUALITY meat. Medium Rare is the way to roll!

1st of all I'm proud to say when I met my fiancee she was a strict vegetarian. But after some education and persistence on my part she now eats rare steaks. Win for me!
I used to eat steak well done but now I generally like it rare to medium. If I go to a classy restaurant I'll generally ask them to cook it how the chef would eat it. The art of cooking a steak seems lost on a lot of people in the food industry. If I go somewhere I haven't been before I generally ask for it rare, they generally overcook it anyway to medium which is fine.
As for sauce, depending on the cut meat I generally don't have sauce. But when pushed I'll have pepper sauce.

Depends on the cut for me also. If was going to generalise I'd say rare - pink in the middle, small sliver left raw. If it's Roo or Wallaby more raw in the middle.
