My missus has brought a slab of Yearling Beef (my birthday dinner). I'll cook it on the BBQ with the rotisserie. So my question is, how should i prepare it and what should I cook it with.
I was thinking Carpet bag Steak style, cut a nice pocket and stuff it with oysters, marinade it before I cook, or baste it with a marinade while it's cooking, or should i just leave it as is?

I'm thinking, ostyers with a red wine marinade while it's cooking nice and slowly with veggies in a pan underneath sucking up all the marinade.....Still got to wait till tomorrow though!! :P

make it kilpartick style marinate the steaks with some worchester sauce over night..
then 15 before u wanna stuff ya steaks whack the oysters and some finely chopped bacon in some worchester sauce and then whack it all together and cook on the bbq and cook to your liking![]()

Try this...I do this every year for xmas lunch...... ( for some reason i keep getting more visitors every year for x mas lunch.
Make up a marinade withthe following....
approx 1/2 glass port,
1/2 glass worsteshire sauce,
a good tablespoon of minced garlic,
about 3 tablespoons of honey
some mixed herbs in a sealable container ( lunch box type) mix it up and place meat in and put back in fridge for the rest of tha day.
If you have time to leave it in overnight, get a whole fresh ripe pawpaw and remove all of the flesh and add to the mix and turn it into a sort of pure`.After a few hours give container a good shake up and turn the meat over. ( dont worry the meat will not taste like pawpaw...... it acts as a natural tenderiser and will turn your meat super super soft!!!)
I leave it overnight when i do it. But i buy a 5 kilo export quality rump and cut it into 4 monster steaks!!! ( yes that is right they are about 2 inches thick and are 1.25 kilos each!!!)![]()
They end up so soft in the marinade that when you lift them out of the container the rip apart sometimes.
I fire up the barbie and get the side with the hotplate on it nice and hot and well oiled. Seal each piece of meat for only about 30 seconds on each side.
( this will seal all of the juices in).Remove the meat.
Then i let the hotplate cool of completely. Then i fire up the other side with the grill on it and place hickory chips in a foil container on top and get it smouldering nicely. Close the lid on the barbie and let it get up to about 150 - 180 deg C.
Put the meat back in on top of the hotplate ( which must not have the burners under it on at all... all the heat comes form the grill side)
Leave it in there to cook for approx 20 - 30 minutes.
While this is happening i get some prawns that i have pre peeled and cook sautee` them in a white garlic sauce.....
When meat is ready you take them outcut htem into about 1/3 each and layer a big serving of garlic prawns ontop.. Add a nice salad and a nice fruit platter for everyone to hoe into all day and presto!
That is the extent of our xmas cooking in total for the day.
1. the house does not get stinkin bloody hot from a oven going!
2. the missus is not stuck in the kitchen (it is her day off as far as i am concerned)
3. it is stress and hassel free..... just kick back with some good mates and lounge in/by the pool!
NEVER HAD ANY COMPLAINTS YET!!!
