Sharp blade will go through it easily, even with carbon/aramid lay up. Using a decent set of 10" scissors, used to cut through up to 10mm of carbon/aramid lay up in yacht sails.
Although looking at it, they would only probably be able to use an aramid fibre anyway, as carbon fibre would be too brittle (hates flex)

Cool idea, not workable in the real world unless they solve quite a few problems
- Resistance to cuts and tears to the same level steel does
- Resistance to heat (if ash or something lands on it, will it burn through?)
- How washable is it?
With our current technologies available, I don't think any of the solutions are available at present given how free form that material is.
It's no different regarding scratching/slashing of convertables. That used to happen a LOT but now it's not as often as the novelty has worn off somewhat.
And cars get scratched and keyed all the time. I imagine having a panel replaced or multiple panels resprayed would cost a lot more than replacing some fabric of some kind. It could actually be made stronger than aluminum panels if they use carbon composite weaving or kevlar weaving in it too.
Think shopping trolleys for a moment. The slightest litte bump and your paint needs work. Slight knocks and bumps with this stuff would just bounce right off! painted steel/aluminium isn't very resistant when you actually think about it... It'd also resist hail damage I would imagine.
It takes 2 hours to completely cover a whole car - how long does a full body respray take?
I actually think it solves a lot more problems than it causes. Like the engineer in the video says, panels don't have a lot to do with safety any more.
