check the mating surfaces for any distortion. have you thought about trying a sealing silicone instead of a gasket and gasket goo? It may work better especially if the surfaces are slightly distorted, uneven or a bit corroded etc.

If it's a V8 it will have a surge tank which is under pressure when the motor is hot. It should be self bleeding. If air is getting stuck in the engine check the hoses going into the surge tank to see if any are blocked, especially the 2 small ones on the top.
