Just wondering if anyone could shine some light on thr benefits of running a cooler thermostat or one of the high flow options?

Whats the recommended temp for a vs v8?

There is only one fault with your statement, the 304 is not a modern engine, the basic architecture of the engine is some 60 years old, even the VN style head design is 25+ years old. The 308/4 have issues with the rear cylinder running hot and tend to detonate eating head gaskets when pushed. Stock engine stock thermostat is fine but if you want to push it than running it a bit cooler certainly isn't a bad idea.
