I'm guessing there 1 3/4 HD type SU's (fuel bowl on the side?) on a red motor?
First, take the tops off and take out the spring and piston, now you can see the jet easily, screw the jet up til the inner part is flush with the outer part, mark the adjuster with some paint or a texta and wind them all down 2 and 3/4 turns, thats a good base and works well with a hot red motor.
Next, make sure there is no oil in the dash pots, forget what people have said about lubrication, SU carbs are a variable venturi carb and most of the old pomie sh!t they came out on needed the oil to stop the piston going all the way to the top, and to slow the piston down, a strong red motor needs the whole venturi, if you put oil in it will be sluggish and unresponsive.
Balancing, this the hard bit, balancing tools are ok, but some block off to much air and can be in acurate, and on top of that some after market linkages are crap and hard to adjust.
Start by disconecting all 3 linkages, get a length of 5/16, 3/8 fuel hose, garden hose, or what ever yo can find, start it and with the hose in your ear listen down the throats when it's idling, adjust the idle stop screws till you got a reasonable idle speed and the sound is the same in all 3 carbs.
Turn off and adjust and reconect your linkages one at a time so they clip back on with out moving the throttle shaft or the main linkage.
lol I know the balancing bit sounds prehistoric, but after a couple of goes youl get an ear for it.
That will give you a good base
