Hiya mate. Up here in Adelaides Northern burbs I took mine to Sprint Carburettor and Fuel Injection on the corner of Bridge and Montague just the other day. Seemed to do a good job. They are nestled inbetween the caryard and the Sprint Auto spares place.

Invest in a Gregorys workshop manual, they are worth their weight in gold. Kits are available from any good parts store. It has been a long long time since I had a varajet in bits but I seem to remember the kits came with a good set of instructions.
