well you can paint everything if you want. Well actually its not a good idea to paint the electric connections.

Basically with engine paint, don't paint your headers (extractors), don't paint wiring or electrical connectors, don't paint the radiator fins, don't paint the engine mount rubbers. That's about it.

I am actually rebuilding my 253 (not my car engine, it's a 308) and I will be probably using all VHT paints. I will prime my headers and then paint them in silver flame proof.
For the actual block, I will paint it in Holden blue and the heads that too probably. The intake manifold I will probably do silver. The rocker covers will be aftermarket tin chrome ones. The fuel pump I might leave as it has an aluminium finish. The harmonic balancer I will probably to silver and the pulley silver too. The oil pump I might do silver. The thermostat housing will probably be an aftermarket chrome one. I am also thinking about fully rebuilding the 4 barrel carb and painting it gold but I don't think it would look as good. I'd love to see a gold Rochester Quadrajet. I might end up doing it silver.

So everything will be done in VHT engine enamel rated at 287ºC and the headers will be done with flame proof 815ºC.

its a good idea to mask up and holes in the motor before you paint, i have a gasket that i screw onto my 202's to stop paint going into the inlet/exhaust ports and dizzy holes etc .... it may be anal but with a engine cleanliness is what you want to make sure it doesn't fail prematurely and as rare as it may be, paint chips could do this.

You like my art? took me a whole weekend on cause i had to redo a thermostat gasket...

I used septone products on most of the engine

    - Rocket Cover
    - Side Covers
    - Lower THermostat Housing

    Motorsport products
    - Air cleaner
    - Fan pulley i think its called atm..

    Next i plan to paint
    - Manifold
    - Water pump
& maybe the alternator though this will take more attention, due to wriring.

Its easier to use flameproof on the lot ! up to you .

DONT paint anything that is rubber, moves, electrical or needs gasket goo.
