ok i have just bought a worked 5 ltr for my vh and its in and running but not the best and there is a few things that have me a bit worried so im gonna ask some stupid questions...
does anyone know were i can find a quadrajet vacuum diagram?
ive checked the cooling system but it seems to be running hot... well hotter than the old engine is this normal?
doesnt want to idle in gear (auto) and if it does it idles too high out of gear... any ideas?

I bought a diaphragm off them a while ago for about $60.
Buy from them direct as places that sell their stuff mark up the prices and you could be paying 20% more.
As long as it's below the red line it should be ok. The guage should sit around half or just over half when hot. Make sure you use coolant and not water.
When you say it doesn't idle in gear, does it stall or chug or what?
The idle in gear should be approx 650-700 rpm and in neutral or park it should be approx 850 rpm. When cold and warming up (if the choke is working) should be at about 1100-1200 rpm. You will just need to adjust the carb to get it right.
Make sure your ignition timing is set properly, 6 degrees from memory.

the temp thing your spot on its sitting just over half when hot.... so that ok
in park it idles around 800rpm and drops to about 600rpm but it stalls after about 10secs or so and if i get it too idle without stalling then put it in park the idle jumps up to around 1200rpm and it slams into gear at that
Check the vacuum hoses. The carb might need to be rebuilt. The problem sounds like it's to do with the carb.
I couldn't find a diagram in my manuals. What hoses are you unsure of? I can tell you where to connect them. Most of them connect to the manifold.

the stalling will be due to a vac hose going to the wrong place on the carby..... or maybe a vac hose missing.....

how much would you look at paying to rebuild a carb?
i think i will need to do this shortly
About $50 for a kit available from Repco, Autobarn etc...
Or about $200-$250 for a rebuilt change over one from carb specialists.
They can be fiddly. There is a lot of pieces and you need to have patients.

about the temp gauge it is not unusual for it to sit a bit over half way. mine does the same thing. when it was a stock motor it used to sit a little bit over half way and now as a hot motor it does the same thing. if your pretty worryed about it get a thermostat that opens at about 50 degrees. but it is not recommended on a worked motor. the best way wld be to buy this coolant called redline water wetter. have not tryed it yet but ppl on this forum suggested it to me. it has worked for alot ppl. best coolant u can get apparently. i have the same engine as urs so thought i might tell ya what i know.
There is no problem ever after having a hot motor for the guage to read over the half way mark. If you are getting the red-line during normal conditions, it wouldn't be the coolant in the radiator.
I personally don't waste money on expensive coolant fluid. What I use? Premix $3.99 coolant from Autobarn. Works just fine for me.
I bet a million bucks the turkeys at the dealerships don't use expensive shit either, but charge $45 for a radiator flush!
