Default fitting 265/35/18 tyres on my vk.....

just want to see if it is able to be done fairly easily as i got the tyres very very cheap. obviously im gonna have to get the guards rolled so once that is done will they fit? car is currently in primer awaiting paint to come in for respray so figure now would be a good time to get it done. also how would i go about correcting the speedo readin after fitting these wheels? thx
