if your keeping parts that you want to sell individually, keep parts like the alternator and master cylinder.. Exterior parts worth keeping are the glass headlight covers, door handles, trim, front bumper. Electrical parts like window washer switch, air con control, the tape deck if it has it. Theres heaps of stuff you could take out and sell..
