no dont take the thermostat out. the engine needs a little heat in it and you risk more damage to teh head through it running too cold. if anything a small (i mean like 2mm) hole can be drilled in the thermostat, or get one with a lower temp rating.
it shouldnt do another head if you keep the coolant full and make sure you bleed the coolant when you fill it to stop air sitting in the top of the engines cooling system.

did you check all the water passages in the block? if they are restricted/blocked, that could be your problem right there...?

My thermostat was stuck open a month ago and it wouldnt heap up for 5 k's and also the heater didnt get real hot and she ran so rich. Al these things u must consider, if its running too cold it will be rich and you will burn juice.

Just make sure you get the thing running hot and bleed both the nuts so there is no air bubbles in the system. The death of your head would have been because coolant got low, an air pocket was stuck in the top of the manifold and gas (air) gets hotter way faster so you would have super heated the air to about 150 deg, cracking the head.

Use a thermostat, they are $30 smackers, small change for a smooth running car.
If you want more inches, STROKE IT!

we all have to remember the 2 bleeder screws, or no water gets up there, causing a steam trap and a cracked head

the highest water passage is higher thah the top of the radiator on the nissan VL 6
