So basically, is it illegal (in QLD anyway) for me to remove a muffler between the cat and basically the end of the exhaust, so it's like this:
[Headers]======<CAT>=========================[Muffler/Tip]=
instead of:
[Headers]======<CAT>======[Muffler]===========[Muffler/Tip]=
Would this make the car sound any tougher, or would it be a complete waste of time and either illegal, or cause the car to fail emissions laws/cause crazy warning lights of doom?
I've also heard of people cutting open their mufflers and removing all the crap, and then just welding a piece of pipe through so from the outside it looks like a box =['''\\\///'']= but inside it's really just a straight through =[===]=

The reason it's illegal is because all cars must be under a certain DB limit. Most cars without a muffler sound like ass any way so I would advise against it. Even more so considering you have an N/A RB30. Get a proper straight through muffler at least.

the only illegal part of it would be noise level.
if it doesn't exceed noise levels then no worries.
the cat converter reduces engine emmissions the muffler reduces the sound and the resinator turns it into a gush of wind sound.
