    Water Temp
If the gauge is mechanical, you need to drill a hole in a the radiator and weld the sensor on, then run the wires to the gauge.
If the gauge is electrical, just simply remove the exisiting water/coolant temp plug (the long rectangle black one with a green wire, not the yellow one) and hook up the new one (by looping the wires around the needle)

    Oil Temp
Mechanical type; you need to drill a hole in the oil sump and weld the sensor on, and then run the wires to the gauge.
    Electrical; ?
(you don't need oil temp anyway it's pointless)

    Oil Pressure
Mechanical; the gauge would come with fittings and instructions to hook up the oil tube to the engine block.
Electrical; the gauge would have a oil pressure sensor (round knob shape) and you simply remove the existing oil low switch (to the left of the oil filter) and screw in the new sensor, and run the wires to the gauge.
(unless your car is a Calais you can use the exisiting oil pressure sensor, but I have noticed some Calais had the oil low switch only, unsure on that one ??)

note: there may be better/different ways aswell

mechanical water temp gauges generally dont last long, they get a leak somewhere in the system
the sensors were sometimes put in the bottom radiator hose but this seems to have gone out of fashion

And as for the catch can, non vented depending on where your from, you will have to run it from your rocker to the catch can then return lines running back into the plenum so emissions will be exactly the same.
