would i be able to use the setup for the disc's of a disc brake vn or vp?

yes you can, i have looked into this and it is just as easy to go buy a whole disc rear end and its almost cheaper
you need
- disc
- calipers
- the brake lines(metal that runs acros diff top)
- disc backing plate
- handbrake brake set up
- a vl disc brake handcable (vn/vp are to long)(pritty sure vb to vk cables are ok)
- and the seals on your axels will need to be cahnged to disc seals or you will leak diff oil
