The Terminology is easy... I can help you with that.
However the 'correct' readings are subjective to how old the engine is, how many k's its done etc. The best thing to do is to record a set of data when the car is going well and use this as a baseline. You can then use this baseline to compare with fault finding later on.
Just bear in mind a lot of the readings taken by the computer / WinALDL are subjective to the atmospheric conditions of the day. For example, if its wet you will have a different air pressure than if its hot hence the MAP (Manifold Absolute Pressure) sensor may record a different reading. The same goes for the Coolant Temp sensor etc.
