Whats the best grit sandpaper to use when sanding a whole car back,car has been scratched with a knife or somthing sharp.

I wouldn't sand a VN back to metal if it's rusted in the scratch then sand that area only, as small as you can. Just use wet and dry. The thing is VNs have very good rust proof coatings on the sheet metal if you sand that off they wont last any longer than your typical 1970s car (which wasn't long)
mate i suggest you go into a panel shop and speak to a painter if the boss lets you cos i could sit here and type for ages explaining the procedures, do's and dont's and it will confuse the shit out of you.
and it wont hurt to give google a shot either
