I'm trying to find 5 new rims for my VN, there's 14s on there at the moment, and don't really know what the impact of going to 15s would be, if anything..
Is it worth staying with 14s, or going for the 15x7 interceptors?
Wont make any difference, except you will have a tiny bit more traction due to a wider tyre.
Standard VN calais wheels are 15x7.
You can go upto a 17" if you really wanted before you would notice much of a change in ride comfort.
Some say less talk more action. But I rekon more torque less traction!

I thought the standard Calais wheels were 15X6?
vn calais rims are 15x6....(just for the record)
btw just get some 16/17's.. nothing bigger(i think i remember saying 17's are the perfect size for handling

I'd get a set of factory 16" or 17" bearing in mind a lot of them won't fit a VN front hub properly due the the differnet bearing setup. I looked for some factory alloys at a few tyre shops, they did not fit properly due to the hub (they will if you leave the front centre caps off usually but that looks bad) and the solutions they offered ranged from removing the cap altogether so water would get in (told me the rim sealed it off!) or bashing in the cap so it would rub on the stub axle and fill the bearing with metal filings. I was not impressed.
I ended up with VS S Pac wheels they fitted by grinding the ribs off the back of the centre caps. Just try the rims yourself before you buy them if they are off a later series Commodore.
