To my knowledge you always keep the crown and pinion gears from a diff together

The crown wheel and pinion PAIR are ground and lapped and polished and whatever else so they fit together absolutely perfectly like a match made in heaven. Put a mismatched pair together and they will probably whine like crazy and no amount of adjustment will get it just right. Gears are fussy critters.

As above, the pinion and crown wheel are a matched set.

You need to get a diff shop to fit the centre to your car. I did this about 3 years ago, I pulled the centre out of a wreck and had the diff shop fit it. installing diff centres is an exact science and is not something most of us can do in the driveway.

Each gears wear differently, it's best to put your old 3.08 gears on your new centre (save changing a pinion)
With great cars, comes great drivers.

When changing the centres over, make sure you take the spacers as well from the donor housing and use them in the same locations in your housing.

But as above, just swap the complete unit if they are both sedans. VN-VS live axle are all the same.
