Not so much whats easier (about the same really, I have done both) but the fact that mechanical gauges are illegal and dangerous inside the car.
Electrical look neater as a fair few of the factory sensors can be used, whereas the mechanical will have hose running everywhere.

the electrical gauges are probably easier but sometimes mechanical guages can be more accurate

i got all electrical gauges in my car, oil pressure, water temp, but i think my vacuum gauge is mechanical? cos its got the vacuum hose that goes to the engine bay but not really dangerous, electrical ones are easier i reckon,

A gauge doesnt need to be accurate really, the whole idea is to show a change from normal.

Yeah vacuum gauges are mechanical and as you said relatively safe, having no hot or pressurized fluids.
