How do they do it?...like....wat software and hardware do they (greenfoam, Dr bob etc) use??

Start here: Tuning - Just Commodores at the top and read for a month or 10. Should get you on the right track. GF and DocBob both have years of experience doing this stuff and it takes a very in depth understanding of engine fundamentals to do even the simple stuff. It is not something you can pick up in 5 min and expect to be an expert.
