Can someone please tell me how much water a vs v6 ecotec holds please?

12 litres.

As accentstencil says, 12 litres...however, if you drain by pulling the lower radiator hose off you will only drain about 5 litres - to drain the full 12 litres you need to remove the knock sensors. (this isn't what you asked but I thought I'd throw it in as well!)
