It sounds like a blown or leaking head gasket. And you dont always get coolant mixed with oil when these blow or leak.(which means no milky stuff under the oil cap).Id get the cooling system pressure tested. And do a compression test on the engine. These are cheap to get done and will show whats up.(if anything is)

Brett jjj is on the ball. Get the tests done as he has advised mate.

When you replaced the coolant - did you have the heater running when bleeding the coolant system?

Also have you checked your radiator cap, these caps use a double seal so the radiator can suck coolant back through from the overflow tank once the engine cools down.Make sure its the right cap and check the seals for aging, cracking etc.Or better yet, replace it.If it shows up to be fine, get the tests done I mentioned before.

We bought new radiator cap today… and so far so good…. But the temperature gauge is really strange or am I just paranoid…. It goes over half when we drive it … I think it could be time to sell the car…. Sick and tired off fixing the commodores  ……… see how I go for few days… and we did do the bleed screw with the heaters on … who bloody knows…. Sometimes I wish I was a mechanic
