5L thermo set-up?

hey everyone, im new here and thought this would be the ideal place to post my question.
i own a 97 5L VS and want to put a thermo fan in place of the vicous fan, im fine with wiring up the relay and probe/switch, i was wondering;
1. what are the best brand fans to use?
2. is a single 16" ideal or dual 12" ?
3. do i need to shroud the rest of the free space around the fan even though they come in there own shroud?
