its on the front of the inlet manifold under the throttle body, theres 2 sensors there. One is the temp sender to the dash temp gauge and the other the temp sensor for the ecu, left one is dash right is ecu as you stand infront. You can get them both out with out taking the TB off.

Yeah, I had a look in my Max Ellory's VR/VS book, the pics aren't very good, but, best I can work out, as 'bandit10' said, the sensors are kind of behind(when standing in front of the car), and under the throttle body.
I'f you stand about the left headlight, and look down in behind the throttle body, near the area of the oil cap on the rocker cover, they are hiding down in there between the fuel rail, and the rocker cover, in the lower half of the intake manifold.
Best I can describe without access to an actual 5lt VS for pics.. lol

easiest way to get to it i found remove the radiator fan and shroud, engine covers and you will see a loom that runs on top of the water pump look behind there the green single wire is the temp sensor for the dash it slides into like a O terminal, thats on the left side and on the right is the one going to the ecu. Mine used to play up on the dash until i removed the clip and you can bend the connector so it slides in nice and tight. you will understand once you get it off
