If you are using the standard 1.35Kpa/20psi radiator cap, then I'd use the setting the standard electric fans come on at - from memory it's 103deg. Also it will depend on what thermostat you have fitted and where the thermo switch is located. You don't want to run them cold as it's not best for efficiency - your thermostat starts to open at 92deg so switching the fans on just a little above this may cause the fans to run when the really don't need to. The 3 core radiator will be excellent for cooling....
What I'd do is leave the engine idling and watch the temperature gauge - when it reaches a reading just above where it normally sits, adjust the thermo switch to bring the fans on.....watch it cool the engine and switch off then see if it switches in again at the desired gauge reading.

Just from threads on this forum, the 16" thermo will be to small. It will probably work through winter but wont be sufficient on a warm summers day. Pretty much duel thermos is the only way to go with the 5ltrs. I have twin au thermos on mine and they work hard on a hot summers day, but they do work. I had the memcal re-flashed though, to use the factory ecu thermo fan output though.
