A/C and fans could be run separate to the ECU via some switches.

As for the cluster, no idea. Interesting though.
What does the carby offer you that injection couldn't?

is that even legal? considering your engine emissions and fuel consumption will go through the roof. and not meet standards for the VR era.

As others are saying, Emisssions penaltys from the Authorities are massive; just as long as ur aware of this. 10k, is a real figure on the road if u get caught. If its a track car or just generally an off road car, then yeah go 4 ur life. Disconnet the engine harness altogether and have a tuner (like delcowizzard on this site) remove all these features from the ecu so the ecu still works for all the ancillery stuff u want. This is a fair;y big mod, and for the most part you will have to ask the tuner for a custom wiring diagram. You could also (if you are already computr litterate) learn how to tune with somthin like "tunepro live" and just leave it as injected and learn how to turn proprly in the 21st century. Instead of adjusting mixtures and timing manually. So last century

yeah why anyone would go backwards is beyond me LOL get the gear to tune the efi its no different than changing springs and weights in the dizzy to modify timing and no different than jetting a carb apart from you get the jetting right for all rpm ranges
I tune the oldschool way fear on the passengers face and knuckle colour cant go wrong
