A couple of things to consider is one, that the thermostat was put back in and second is the sender unit may be incorrect.

My VR temp is stubborn. It takes about 15 minutes of driving before it reads just below halfway on the dash.

hmmm im not sure i think i will go to the mechanics and get them to test the temp.

is there different types of sender units? maybe the wrong 1 is in there?

Inspect the sender unit - if it looks undisturbed it will be the original (they rarely fail). The V8 is a big lump of cast iron that takes a long time to heat up, so maybe run it a bit longer. Also, check if your heater is HOT....if only warm it may indicate the thermostat is buggered.
