I have had a look but cant seem to find any information.
Does anybody know if the air temp sensor can be behind the MAF sensor and if the car will still run fine?

Yes it will be fine to position the IAT sensor after the MAF sensor.
Not that there will be any great measureable difference in this instance, but technically, the further along the intake line the better as you will be reading a more accurate air temp that is being charged into the cylinder, rather than the temp in the air box. i.e. the further the air travels before reaching the cylinder, the more opportunity it has to heat up and therefore be a difference in the IAT measured temp and the actual temp going in with the inlet charge.
Hope that makes sense, but in a nutshell yes it will be fine.

Ive read before that the IAT (Intake Air Temp) sensor is located in the airbox so the computer knows the temperature of the air thats passing over the MAF.Thats why its located in the airbox before the MAF.In the MAP (Manifold Absolute Pressure) equipped vehicles,(eg-VR and earlier)that didnt use a MAF, the MAT (Manifold Air Temp) sensor was located up in the inlet manifold.
