Default jerking n flat spot 97 vs exec wagon

Hi all, searched forums before i posted this so I wouldn't look like a total douche lol.

My vs is havin sum major issues which only started about 2 weeks ago, after we installed the sub n amp...
Car wouldnt start after driving it for an hour.. got racq out n jumped it..then she over heated massively..like on red. Racq dude said battery was fine..maybe the alternator was on it way out. Got the car towed home..replaced the thermostat n thermo gasket. She ran fine. Until 2 days ago...when I noticed a flat spot on acceleration, and then the jerking started when u hit about 40kms..n doesn't stop til u hit 80..starts again at 95kms. Plugs n leads were old..not sure if previous owner replaced them ever..so replaced both today, also had alternator tested (its fine) ...but she's still carrying on with the flat spot n jerking. I dont run E10 in her
as she dies with it. Thought it maybe the injectors so ran some injector cleaner with a full tank, still hasn't fixed the problem.
Oh sub and amp were disconnected over the weekend. I'm stumped as to what the problem could be...

Oh noticed this arvo the exhaust manifold has a small split..replacing it this week

fixed that problem...replaced 1 of the coil packs (other 2 gettin done this week) have a new problem now...grrrrr....my baby is overheating and thermo fan isnt kickin in til the gauge is 2 bars from red hot..even then its slow to drop the temp. Gauge works as you can smell the heat. Going thru coolant like you wouldnt believe. Spent 3 hours refilling n bleeding (had heater on whilst bleeding) coolant yesterday arvo..still didnt work...n yet the coolant isnt leaking anywhere from above or below the car
Thus far as well as all the above, i've replaced/checked the following:
    * Throttle Body & both sensors on the throttle body-replaced all
    * Coolant temperature sensor - replaced
    * Valley cover gaskets-replaced...got 6 in the pack from repco (however only took 4 off car; perhaps i need the other 2 but cant for the life of me work out where??)
    *changed the low fan relay
    *checked the high fan relay
*checked the air ducting and air cleaner
*checked all cooling system hoses for holes or cracks..all good
    * checked the carbon cannister for crackes or holes...nothing
Oil cap was milky but the dip stick n slight oil leak (under engine) arent..oil leak gettin fixed n filter is being replaced this comming weekend

Got the ellery rapair manual...has come in handy big time..but cant seem to find whats causing the over heating
need help in a big way please

How old is the water pump? it may be worn out. In turn it is causeing it to overheat and then leaking all the coolant into the overflow

    Or

Do you get steam coming from your exhaust?
If the inlet manifold gaskets have been replaced then it could mean you have a blown head gasket... You will need to get the cooling system and engine compression tested to help find out where the problem is....

not sure how old the water pump is. Theres no steam from the exhaust, however there is oil in the water/coolant...have pulled the top of the motor off again to have
a look.. gonna check the water pump as well. Really hoping its not the head gasket.

Thanks for the help james, very much appreciated.

I seriously reckon, you should ivest in a capacitor as it sounds like the ECU is unable to pull enough amps when she is doing some mad DOOF DOOFS
