Check the temp sensor wiring connectors. The V6 has the temp gauge sender unit at the front of the engine just below the thermostat housing where the top radiator hose connects to the engine.. Theres two temp sensors there, ones for the temp gauge, which is actually known as a sender unit, and has a single wire connected to it. The other temp sensor has a couple of wires going to its connector, and this one is used by the ECU so it knows the engines temperature... Im not too sure about the location of these on the V8s though.

Try giving the dash a bit of a hit before assuming the sensors are not working... Sometimes they get stuck or there is a bad connection in the cluster....

Mine does this... One day, i'll pull the cluster out and clean the connections on the back... I think it's a bad connection between the gauge posts and the circuit pad on the back (The copper nuts maybe loose/corroded??)

It's quite an easy job... I'm just lazy... but when it's not working.. a firm tap on the Dash above it... and it kicks into life.
