the most common sign is that the coolant has a "milky" residue about it. like if you take the radiator cap off and there is a film present.
also look for bubbling of the coolant with the radiator cap off, the car will probably over heat and run pretty crappy too.
failing that you could pressure test the cooling system.

Go down to your local KMart Tyre and Auto. They have a tool they use to test for CO emissions in your radiator. Easiest way to do it.

Not all the time does a head gasket blow into a water jacket. It can quite often blow between cylinders, which will give you intermittant stalling, missing and getting hotter than usual.

The best thing to do is take it to a mechanic and get a cylinder pressure test done. Shouldnt cost more than about 20-30 bucks if you give him a hand to do it.

You don't have to have a mixing of fluids to have a blown head gasket.

One of the most likely indicators is big exhaust bubbles in the coolant and loss of coolant as the gases build up and push it out the overflow reservoir. Another indicator is a watery exhaust as coolant gets pushed into the cylinders when the cooling system builds pressure. However, the gasket could be blown out between the cylinders in which case none of this would be apparent.

The easiest way to tell is to do a compression test with a compression meter that you can buy cheaply at any SuperCheap Store. Basically you warm the motor up then take all the plugs out... and attach the compression meter to the plug hole and crank the engine over without the engine and fuel relay installed and record each cylinders pressures...They should all be within 75-80% of the highest reading... a blown head gasket on a cylinder would show an abnormally low reading...another thing to look out for is 2 cylinders side by side with low readings as this indicates the gasket has blown out between the cylinders.

Aghhhh IBLOWN... beat me to it while I was typing all that. :p

When you screw the sparkplugs out if one or two of them look "different" to the others that will tell you which cylinders are affected. Good Luck.

When doing the compression test make sure the throttle is wide open.
