by 'threaded it' do you mean to rounded the head using a not-quite-right spanner or shifter?

If that is the point you are at then if you can get some DECENT vice grips in there you might shift it. There is always wd40 or a variant to loosen it, or give it a tap with a hammer to try to and shift the threads a little.
Anytime i've had a bolt stuck and got to where you are at i've ground a slot in it and use a big screwdriver. Depends on the bolt really.

If all else fails there is a tool/product called easyout (i think) which effectively drills it out and saves your thread.

just noted you said water temp sender. It isn't a bolt so most of my post will be meaningless.
I don't know what they look like but could you drill a hole through it big enough to slip a screwdriver through as a lever?

Or is it stripped? Is the sensor just spinning without undoing?

it has a clip on the end of it then like a bolt sized thing so you can use a spanner to take it out i might try some vise grips or a screwdriver and some how tap it around to turn it
