When you say "I have a big thermo on it" do you mean thermostatically controlled fan or an electric fan that gets turned on when the engine is hot?
As it gets hot when in town or stop/start that would indicate that the radiator needs more air flowing thru it to keep it cool when ram air is not enough. If that's the case then I'd investigate fitting a high capacity electric fan and/or fitting one of those heavy duty V8 radiators they have on Ebay. Good Luck.

Assuming the gauge is reading correctly and you are not loosing pressure or coolant and the level is correct, is your thermostat working correctly?

Where is it mounted and what type (including push or pull) of thermo fan, is this problem since fitting this fan?

yeah check thermostat, I would also make sure the fan you have is kicking in when it is supposed to...
that your your cooling system needs an overhaul!
