VT Temp Gauge cant make up its mind??

Hey guys.

Last couple of days I've noticed after a few mins of driving my temp gauge rises straight to quater then after another 5- 10 mins it'll shoot straight up to Hot and start beeping at me then crashes down to a quater again, its happened a few times but whenever i check the engine and place my hand on it, its cold as =S.

I had my fluid replaced and checked about a week ago.

I cant get around to putting back in to get it checked atm, so my question to you is.
Would this be something faulty with whatever form of computer it has in the car, or something else?

Bleed out the air if you just replaced the fluid.

If its still doing it, its probably your coolant temp sensor playing up.
