There is a series of articals on Autospeed.com about setting up an in car PC system. The artical is quiet old, however I believe the information in it would proove to be quite valuable, and would apply to something like an xbox also. Check it out!

The first of the series is in the link below:

I think it would be relativly straight forward..... How ever i dont think you can install a screen into the dash on the passanger side as the Air Bag is there.

This is what i would do.
I would rip the center arm rest out and mold the Xbox into there. (you will obvisioly need a power inverter to run it so don't forget him)
Most 7" Double din Head Decks have RCA in so you can hook it up to it or i would be hooking it up to a roof mount 12" / 15" as they also have RCA in.
If your going to use a 360 (which is presume) it should be pretty easy as there slim line. BUT remember that where ever you put it you want to keep it cool as they dont do to well in hot/ Moist conditions.

not sure if this will help ya at all but here's where i put my 7' lcd tv/av input -so can plug whatever ya want into it, mines just hooked up to the dvd/cd head unit(under it) with av plug coming out as well so i can plug nokia phone into it for mp3, gps maps, or game's if board,
it all fit in pretty easy, bit of cutting and stuffing around but looks neat.

get the new slim line PS3 doesn,t heat up as much nsw screens have to be in the back cause if the driver can see it u can be booked for it being on while driving. stick an inverter in the boot and run your sound through your amp i have seen the ps3 and xboxs mounted in the boot access hole all nice and neat with twin overhead screens/dvd player. have seen a set up that slides outa the glove box then flips downward with ps3/xbox mounted in kick panel (custom fibreglass) also cool

Given the power consumption and heat given off by an Xbox 360, it would be a very bad idea to put one in a car.

and research power suplys aswell. i had a fun time getting my ps2 to work in my vx. the power inverter needs to be on a spacific sign wave or something to make it convert the power from dc to ac properly. i ended up buying a power suply off ebay and it works a treat. but definalty do your research on the power suply before you start or u will be disappointed. talk to jaycar they have the parts needed.
