Low Coolant Light

G'Day guys, I have a 2000 VTII LS1 and as the title suggests I have a problem with my low coolant light coming on when it wants to.

I'm fine with my coolant level,the temp on the dash is perfect it sit's between quarter and halfway, I have changed the sensor in the bottom of the reservoir,I have changed all of the fuses in the car and it still lights up with a
mind of it's own. Has this happened to anyone or is my P.O.S dicking me around again

Are you definately sure the cooling system has been bled properly and you dont have a pesky air pocket causing the problem? And have you checked the error codes? Im not sure but maybe it needs an error code cleared before it will reset. Just a thought..
