Generally when you hear that sound, unless your towing a big load or giving it a mother load full up a hill/tight twisties you have a problem. Coolant leak/radiator has shit it self, many things can be causing it. Get it tested at your local garage.

may be ya heads leaking, heater tap leaking?.. the machanics can test the water to see if it has exhaust gas's in the water from leaky head..

but the second fan will come on when its overheating, it wont cause it to overheat..

if the temp is goin up once the fan comes on i would check it is spinning in the right direction, you might have one going the wrong way....

yes ya water should be visable, but when its overheating and full of water it will make all the water spew out ya radiator cap into overflow bottle so might not hav a leak.....
also check ya cap, the seal could be stuffed and letting water out cap into overflow bottle then running out of water and overheating,

my 3month old cap gave way a few weeks ago , lost $30 worth of 1day old coolant, the bitch, ..

is there a way to test the cap or would you just have to go buy a new one?

sorta, ya could try filling it up and put cap on normal ,
pull the hose off the side of the radiator cap.(overflow)
let it run/idle till get's up to normal operating temp..
and see if any waters being spat out that pipe ya took the hose off from(side of radiator cap)

it should only let water out if its way too hot...

also if you havent already- you have to bleed the water system after its been pretty low on water or can cause air locks and overheating/damage...
