Firstly, welcome to the forums and the like. Alot of the answers you're after will be answered by a quick flick through your manual. Knowing if you're car has had an optioned alarm or an aftermarket one installed is impossible to tell without seeing it etc. Same goes for the stereo, if you have had premium sound installed or just the standard, although if you have rear shelf speakers I'd say 6 as you have 1 in each door and then the 2 rear parcel ones.
The lights coming on when you unlock the car is standard but you can stop it by turning the interior light switch to OFF instead of when door's open etc.
And no, there should be nothing preventing acess to the boot from the rear seats when the ski hold is open.

Hope this has been of some use to you, enjoy the forums.

Carcovers are good, but make sure you get one that is ventilated. ie not waterproof.
