not many v6's blow head gaskets, it would be a rare case.
hi. you can do a few simple checks to see if its a head or manifold.
head gasket: is it running rough? does it blow steam out from exhaust (other than a cold start up)? is the coolant in the OIL? if there is a (white) milky substance in oil its a head gasket! let car cool down and take rad cap off. then start car, let it idle for a bit and if theres bubbles in radiator its the head. also check down side of block, if its leaking there there will be white stains on the block. also does it over heat or run hot?
manifold gasket: generally rough idle and may stall with the low revs

also check your trans dip stick if you have an auto cause they run the factory cooler for them through your radiator and some times they split.
I have the same problem. I was loosing some water aswell. Got it pressure tested, turned out to be leaking water pump. No leaks from head etc. I asked them what about the oil, and they said that these cars can sometimes leak tranny oil into the radiator. Maybe try those Holden Pellets to seal things up.
Remember, steam in morning on startup is normal, cheack after a while if it goes away or not.
Also, if you havent bled your cooling system, it will always have seom bubbles, so you will need to check it a few times.
