Do the thermos come on when the Air-con is switched on?
You can unplug the thermo fan and stick a multimeter on the plug coming from the car and turn the air-con on, it should read some voltage, but not sure if this can be done wiht the VT ones. If it doesnt read voltage then try replacing the thermos, it would be the easiest option rather then fault diagnosing them unless you can see something really obvious wrong.

Replac the thermostate housing and gasket. Since your doing this and it has over heater it may be a good time to flush your system and replace thermostat and radioator hoses, replace coolant with fresh stuff (use genuine) and bleed it.

Repco make a good coolant, good quality(high glycol content per litre), cheaper price. Valvoline G05 is one of the best recognised around the world, especially the U.S. Some servos stock it.

I'd get a pressure test done and check the water pump as well.

You need to replace your themostat housing and top radiator hose. Check fan relay, just sawp it with the horn relay. They also breake the wires where the fan plugs in near the radiator.
