Nice pick up... as for mods, this is my thoughts... and you do know that everything you suggested or will be suggested is illegal.
Heads(Higgins) & Cam(something around the low 23x, LSA 112 and not >610 lift or you WILL have valves hitting pistons)
Valve Springs(Doubles @ > 650 lift)
Intake manifold and throttle body(NOT worth the cost over the perfomance increase you get - E.G $2.5K for ~20-40rwkw)
Uprated Pushrods & Roller Rockers @1.8:1 to suit.
MAFless tune - YES(but replace the LS1 MAF with a LS2/VZ if you want the engine bay looking original)
OTRCAI - Remove the MAF(But the engine bay no longer looks STD)
Strut Brace - I say do it, at least it WILL minimise the chance of the strut towers seperating and it does provide a performance increase on road cars. Others on here beileve that are worthless.... your choice.

Thanks darcon, thanks for the great advice hey. I guess the exception of the OTRCAI will have to be given for the engine bay. Roughly how much would that all set me back do you reakon ? I knolw you said the manifold and throttle body are not worth the money but 20-40rwkw is pretty impressive really when people spend the same amount on an exhaust system and get the same power figures
That's the way don't blow money on a 6 is my best advice. I was once silly enough to think doing up a 6 was worth while them I went for a drive in a VE SS and realized what I was missing out on lol then I saved for my first V8 and here I am with on hell of a car for a freaking good price
this is what i like to hear, if only every other mangtastic P plater was the same as you.
intake manifold and throttle body will only offer gains if the car is already extensively modified etc. boost or stroker, on a fairly stock car maybe 5-10hp increase if that. not worth 2.5k.

True true I'm new to the LS1 so this is a big learning progress. True true if I was to put a set of heads/cam/valve springs would that make much difference ?

yeah thats cool man all got to start somewhere. yeah that would be a good start, leave manifold/ throttle body till last.
most people do something like exhaust and OTR first, then diff gears, then cam/heads/valve springs, then maybe a ripshifter or something etc.
Well next on the list of things is a cold air intake, already has a full exhaust system, lowered on it's guts lol
Dunno about diff gears hey cause I got a feeling it already has 3.9 diff gears hey cause gee it picks up quick (more then a ordinary V8) yet to put it up on a hoist yet and have a good look
So what price would I be looking at for cam heads and springs + tune ?

because its a manual HSV it will have 3:7's pretty sure, pretty sure GTS's got 3:9's, someone will pick me up on that if im wrong.
maybe 2-3k for the cam installed, can pick up a decent set of ported and polished heads for 1.5-2k on ebay, then maybe 1k max for tuning. all depends on where you go

Does not sound to bad hey will have to shop around Sydney cause we got nothing in tamworth
You will NOT have issues with Piston to Valve clearance with large lift cams you will have issues with large duration cams eg 238/240+
FYI the lift that cam providers claim is usually to match your heads to your cam ie so if you've got a .610 lift cam you would have as much CFM of as possible running through the head at .610 lift
Do research and talk to as many workshops to find out whats best for you
